It depends.
You have to choose a main charity for when you buy normally. I've got the EFF there, but I think I've only ever bought bundles or humble choice, which work differently.
For humble choice, you get whichever charity they want that month. For this month's choice, for example, they've got... eh... OneTreePlanted. Looks like they only donate 5% of the cost of Humble Choice though.
Then, for bundles, they also decide what charity you'll donate to. But you can set your charity donation to $0. iirc I bought a bundle with all the Resident Evils up to 7 right after Roe v Wade was overruled, and it supported some charity that paid for women in states where abortion is illegal, to travel to some state where abortion is legal, so they could still murder their kids. It let me set the donation to $0, otherwise I wouldn't have bought it.
Bundles also let you give more to the dev and less to Humble, though the Humble cut can't reach $0. Just checked their Metroidvania bundle (that supports some emissions scam), and it doesn't let you go under $3.75 for Humble's cut.
