Most of it is just taste. If you enjoy the survival and gradual progress then you'll like it, if not then you won't. I'd say the two main problems it has are that the combat isn't good and more importantly that once you get to the "end"game you still don't have that many tools to reduce the simple grindy parts. I haven't played in a while but I think that in vanilla helve hammers can't even do anything besides plates, blooms, and bars. And that's one of the biggest grind reducers you unlock in the entire game.
I'd recommend trying it out if you're interested. If you don't like it then drop it, but keep it in the back of your mind for when it gets future updates. It is supposed to get more advanced endgame content eventually.

Yeah, it's definitely a skill issue. You need to pay attention to the little rocks you find on the ground everywhere you go. Finding copper ones isn't uncommon, and wherever you find copper rocks on the surface there'll be some copper ore a little underneath it.
